If there is an abundance of iron in the sediment, the sulfur and iron chemically react to one another to make compounds like pyrite. The amount of total sulfur in a crude oil depends on the type of oil field and it varies from 0.05% to 14%. Of course, sulfur values as low as 0.2% are enough to create sulfidation corrosion in plain steels and low alloy steels. These kinds of steels are often used in several parts of refinery units. Crude oil with low sulfur content is classified as “sweet;” crude oil with a higher sulfur content is classified as “sour.” Sulfur content is considered an undesirable characteristic with respect to both processing and end-product quality. Therefore, sweet crude is typically more desirable and valuable than sour crude. Sour crude oil will have greater than 0.5% sulfur and some of this will be in the form of hydrogen sulfide. Sour crude also contains more carbon dioxide. Most sulfur in crude is actually bonded to carbon atoms, nevertheless, high quantities of hydrogen sulfide in sour crude can pose serious health problems or even be fatal.

Sweet crude oil is considered “sweet” if it contains less than 0.5% sulfur. In comparison, sour crude oil contains impurity sulfur levels larger than 0.5%.

Crude oils that are light (higher degrees of API gravity, or lower density) and sweet (low sulfur content) are usually priced higher than heavy, sour crude oils.
